Cranberry & Raspberry Smoothie Recipe

ingredients

  • 200ml cranberry juice
  • 175g frozen raspberries, defrosted
  • 100ml milk
  • 200ml natural yoghurt
  • 1 tbsp caster sugar

method

Place all the ingredients into a blender and pulse until smooth. Pour into glasses.

Chocolate Peanut Butter Smoothie Recipe🍫🥜

This smoothie was quite thick so I would recommend adding more than 300ml milk. I like the combination of peanut butter, banana and cocoa powder and this is a smoothie I would make again.

ingredients

  • 2 bananas
  • 2 tbsp cocoa powder
  • 300ml-400ml milk
  • 1 tbsp peanut butter
  • 1 tbsp porridge oats
  • 1 tbsp flax seeds
  • 1 tbsp chia seeds

method

  • Add the bananas,cocoa powder, oats, seeds, peanut butter and 300ml milk and blend for at least 30 seconds, until completely smooth. If it is is too thick, add some more milk and blend again. Pour into two glasses and serve with a straw.

Lemon Curd and Blueberry Butterfly Fairy Cakes🍋🦋

I enjoyed making these fairy cakes. For a slightly healthier option, natural yoghurt or crème fraîche may be used instead of cream if preferred. Blueberries may be substituted with any other fruit. Chopped kiwi, grapes or other berries may work well too.

ingredients

  • 1 tsp Baking Powder
  • 100g Caster Sugar
  • 2 large eggs
  • 1 lemon (finely grated zest only)
  • 100g Self-Raising Flour
  • 100g Unsalted Butter (softened)

To decorate

  • 150ml Fresh Cream
  • 125g Fresh Curd
  • 36 Blueberries
  • 1 tbsp Icing Sugar for dusting (optional)

method

  • Preheat the oven to 180°/gas mark 4. Line a 12-hole bun tin or fairy cake tin with fairy cake-sized paper cases.
  • Put all the ingredients for the fairy cakes in a large bowl and beat until smooth and well combined.
  • Divide the batter evenly between the paper cases. Bake in the oven for 15 to 20 minutes until lightly golden, risen and cooked through. A skewer should come out clean from the centre. Remove from the tin and leave to cool on a wire rack. Leave to cool.
  • Once cool, use a sharp knife to slice the top off each fairy cake to give a disc. Cut this in half and set the pieces aside. Spread an even amount of lemon curd on top of each fairy cake.
  • Whip the cream to soft peaks, then spoon a small dollop in the centre of each one.
  • Arrange two of the reserved fairy cake halves sitting upright on top of each one to resemble butterfly wings. Put three blueberries down the centre of each one. Dust with a little icing sugar.

Kiwi &Banana Smoothie Recipe🥝🍌

Kiwis aren’t my fruit of choice. Nevertheless, I decided to make a kiwi and banana smoothie this morning and it did not fail to disappoint.

ingredients

  • 3 kiwi fruit
  • 4 tablespoons organic porridge oats
  • 1 banana
  • 8 ice cubes
  • 200ml milk
  • 250g natural yoghurt
  • 1/2 cm piece fresh ginger (optional)
  • honey (optional)

method

  • Top and the tail the kiwi fruit and stand them on their ends. Slice the skin off in vertical strips with a sharp knife.
  • Whiz the kiwi fruit with the remaining ingredients, apart from the honey, in a blender for 30 seconds. Sweeten with a little honey, if you like.

Strawberry-Coconut Smoothie Recipe🍓🥥

This recipe is by Martha Stewart and is quick and easy to make. I enjoyed this smoothie this morning for breakfast with a bowl of porridge. Smoothies are a healthy drink that can be made with all kinds of fruit. I look forward to trying more smoothie recipes in the future.

  • 1 cup slightly thawed frozen strawberries
  • 1 banana
  • 2 tablespoons light coconut milk
  • 3/4 cup water

method

  • Blend all ingredients until smooth.
