White Chocolate and Raspberry Traybake🍰

I was looking forward to trying this recipe as raspberries and white chocolate are a great combination. This traybake goes well with some freshly whipped cream and a nice cup of tea☺️

ingredients

  • 200g Butter softened
  • 200g Caster sugar
  • 200g Self-Raising Flour
  • 4 eggs
  • 50g Ground Almonds
  • 1 portion icing sugar for dusting
  • 150g Raspberries
  • 1tsp Vanilla extract
  • 100g White chocolate

method

  • Preheat the oven to 180° C/gas mark 4. Grease a 28cm x 18cm rectangular tray with butter and line with non-stick baking paper.
  • Cream the butter and sugar in a mixing bowl until well combined and pale in colour, then mix in the eggs and vanilla extract. It will look a bit scrambled, but the flour will sort that out.
  • Sift the flour and salt into the bowl and mix to combine, then stir in the ground almonds.
  • Chop the white chocolate into chunks.
  • Mix in the fruit and chocolate chunks, then pour the batter into the tray.
  • Bake for 45 minutes, until golden and a skewer comes out clean.
  • Cool in the tin.
  • Dust with icing sugar, then cut into squares.

Things to see and do in County..Clare☘️

County Clare is one of my favourite counties in Ireland. It is not far from County Galway and there are lots of small towns and villages. The countryside is picturesque and very rural Ireland. County Clare is very popular with (American) tourists because of its scenery. Clare is notorious for its flora, fauna and landscape 🦌🌿 I go to County Clare often with friends and family and was there recently. I have been to County Clare on many school trips and family holidays and it brings back many memories🥪 I plan on visiting Bunratty Castle soon with friends. Below are a list of some of my Clare favourites.

New Star Sign⛎

According to NASA, there is a new 13th star sign, Ophiuchus, meaning we may have been reading the wrong horoscopes all along (ugh so frustrating😤🤦‍♀️). The ancient Babylonians ignored the fact the sun moves through 13 constellations, not 12, to make a tidy match with the 12-month calendar. Ophiuchus comes from the Greek word meaning ‘serpent bearing’ and is represented by a man wrestling a snake🐍

My birthday is in early February, meaning my star sign is Aquarius, or at least used to be ♒

Now, my star sign is Capricorn ♑🐐

Mini pancakes Recipe🥞

This is a Tesco recipe and doesn’t take long to cook. Go wild with your favourite toppings 🍓🍐🍌🍯 I made this for brunch today. These pancakes make the perfect breakfast or after-dinner treat.

  • 150g self-raising flour
  • 1 egg
  • 250ml semi-skilled milk
  • oil for greasing
  • toppings of your choice (I chose Big Red Kitchen Butterscotch Sauce)

Put the flour into a mixing bowl. Make a well in the centre and add the egg and about half of the milk.

Using a whisk, or wooden spoon, mix to a smooth, thick batter. You may need to add a little more milk if the batter is too thick to mix.

When the batter is smooth, gradually stir in the rest of the milk until it is well combined.

Add a small amount of oil to the frying pan; just enough to give a non-stick layer to the surface of the pan. Heat on high until the oil begins to smoke, then turn down the heat to medium.

Pour 15ml spoons of batter into the pan. This should make pancakes about 3cm in diameter.

Leave each pancake for about 30 seconds. Bubbles will appear on the surface and the mixture will start to set. Flip each pancake over using a palette knife or fish slice and leave for another 30 seconds.

I had 6 mini pancakes this morning for brunch with Butterscotch Sauce as the topping.

It’s Corona Time 🦠

Coronavirus. The talk of 2020. It may take the economy years to recover. Many businesses have had to close down and many have had to change the layout of their store, café or restaurant. Restrictions have meant that smaller cafés and restaurants have had to close or rearrange their seating areas. These changes will have a huge impact on staff and local customers. Many shops now have hand sanitiser at the door and a staff member standing there, telling you which way to walk in and walk out. There are now queues outside shops, with people waiting to enter ( Jays’ tis’ worse than Christmas). A lot of people have started wearing masks and disposable gloves. In the last couple of months, the world has gone through a massive societal change. It goes to show that nobody knows what the future holds. A global health pandemic, natural disaster or massive human rights campaign or protest could happen any time. I have not watched the news lately and I deleted my Facebook app. Every day for the past couple of weeks, the number of new cases and number of deaths have been announced. In the long run, seeing these numbers is meaningless, unless your researching Coronavirus vaccines or something. The time spent scrolling through Facebook and reading about Coronavirus could be spent learning a new hobby or reconnecting with friends and family members. See my blogpost Minding your mental health during the Coronavirus pandemic 💆 This week, pubs, cafés, restaurants and salons are opening (salon tomorrow eep😍👏💅) The Coronavirus pandemic has brought on anxiety for some and the reopening of businesses and easing of restrictions won’t help that. People seem to be less worried about social distancing and there are concerns that the number of cases could rise again if people are not careful. The regulations that were put in place by governments all over the world definitely reduced numbers. Le Cúnamh Dé, things will be back to somewhat normal again and my family friends or myself won’t get ‘that aul China virus’. Stay safe and wash your hands 🚰

Mind yourself (gurleen)💆

  • Make a scrapbook or look at old photos (good times)
  • Do some cleaning (some people find this relaxing)
  • Do some gardening
  • Walk in nature
  • Look up healthy recipes for breakfast, lunch or dinner ideas and make a shopping list
  • Make a smoothie
  • Brew a coffee
  • Write down goals and hopes for the future; this can be within the next month or year and not necessarily for five years time
  • Self reflect (lots of people do not do this and it is something everyone should do) I will do another blogpost on this again in the future
  • Organise a day trip
  • Go to mass
  • Volunteer
  • Write down a list of things you have achieved recently that you are proud of
  • Emotionally and physically distance yourself from people who are of no value to you, don’t treat you well, are not good for your general wellbeing, are not worth your time or don’t bring you happiness
  • Avoid conflicts,negativity, gossip, drama

Strawberry and Lemon Cheesecake Recipe🍓🍋

This recipe is by Irish blogger Niamh O’Sullivan.

  • 250g Digestive biscuits
  • 100g Butter (melted)
  • 600g Full fat soft cheese
  • 100g Icing sugar
  • Juice of 1 lemon
  • 250ml Double cream
  • Strawberries and lemon zest for decoration

Method

  • To make the base, butter or line a 23/24cm loose-bottomed tin with greaseproof paper.
  • Put the digestive biscuits in a plastic food bag and crush them all to crumbs using a rolling pin.
  • Transfer the crumbs to a bowl, then pour over the melted butter.
  • Mix the melted butter and crumbs thoroughly until crumbs are completely coated. Tip them into a prepared tin and press firmly down into the base to create an even layer. Chill in the fridge for 1 hour to set firmly.
  • Place the cream cheese and icing sugar in a bowl, then beat with the electric mixer until smooth. Tip in the lemon juice and double cream and continue beating until the mixture is completely combined.
  • Spoon the cream mixture onto the biscuit base, starting from the edges and working inwards, making sure there are no air bubbles. Smooth the top of the Cheesecake down with the back of a dessert spoon or spatula and leave to set in the fridge overnight.
  • Bring the Cheesecake to room temperature about 30 minutes before serving. Remove it from the tin and slip the cake onto a serving plate.

Love yourself💖

Everyone experiences insecurities and self-esteem issues at some stage of their life. As I grow older, I am learning to love who I am, recognise my self worth and recognise and appreciate my good qualities. What’s not to love about Jo <333🥰🥰🥰

Whether you have been bullied, had body image issues, didn’t have many friends, had an unsupportive family, no hobbies or interests, didn’t talk about openly about your true feelings, had anxiety, parents have low self-esteem, didn’t perform well at school.. there are many reasons that can cause someone to have a low self-confidence. People who make you feel as if you are unworthy or unlovable are not the people you need in your life. Like attracts like. People who do not even like or respect themselves attract the same. People who respect themselves and respect others will attract the same. Don’t let someone get comfortable lying to you and disrespecting you

I am 23 now and would say I am pretty confident in myself. I believe you can be confident without being arrogant. I have dreams, ambitions, a good friend group and get on well with my family. I know I have lots of good qualities and that I am a good, loving person. I am smart, pretty, friendly and happy (most of the time). I find that spending more time at my hobbies and what I enjoy makes me a happier person. Not engaging or showing any interest with people who could not care less about my feelings is a weight off my shoulders. I am spending more time doing soul-nourishing activities such as art,photography, yoga, mindfulness and baking. More soul less ego🕊️ I find that I am singing a lot these days, a good indicator of my happiness and wellbeing. Inner peace is the new success 🕯️ There are many negatives in the world nowadays, such as racism, discrimination, health problems and more. Investing time doing things you love is a good way to build self-esteem, confidence and happiness. Spending time with friends often has a positive impact on one’s emotional health.

I have volunteered a lot throughout University and have found this is a good way to meet like-minded people,build self-assurance and team-building skills. Whether it is an hour a month or more, it makes me feel more productive and more valued. Family relationships can be strengthened by doing weekend activities. Problems with body image and bullying can vary from age to age and can fluctuate throughout one’s lifetime. The only way to deal with bullies is to not give them the reaction they want from you and to report it. Body image confidence can change from one day to the next, but if you focus on your good qualities rather than what you are insecure about you will realise you have a lot more good qualities than bad. Social media plays a big part in todays world regarding how people feel about their bodies. It is important to know that images are photoshopped and not real. Comparison is the thief of joy👀

Another part of learning to love yourself is knowing what people you should be keeping in your life. If someone does not value you or makes you questions your worth, why are they around? If someone is calling you names or picking on you, why would you have to put up with that? There are a gazillion people on this planet and knowing that you deserve to be treated with respect is an important step of learning to love yourself. Don’t let people use you, take advantage of you, label you, or determine your self-worth. You know yourself better than anyone. You know your past experiences, values and what you stand for. Don’t let anyone else tell you otherwise. Know your worth👑 and slay👠
