Porridge is my go-to breakfast and I have it almost every morning. It keeps me going until lunchtime and is particularly nourishing during the winter months when the weather is cold. My favourite brand of porridge is Flahavan’s. There are many possible porridge toppings which I have listed below. This list may be useful when you are shopping for groceries next.🌅

Köln und Dusseldorf 🇩🇪

Last summer I travelled to Cologne and Dusseldorf. Germany is one of my favourite places to visit. I have been to Berlin before and loved it. I would love to learn how to speak German and I don’t think I would find it difficult to learn. Below are some highlights from the trip. I look forward to visiting Germany again after the Coronavirus pandemic. Kiwi Fruit Smoothie Recipe🥝

  • 3 kiwi fruit, peeled
  • 500ml pineapple juice
  • 1 banana, sliced

Put all of the ingredients in a blender and blitz until smooth then pour into 2 tall glasses.

Profiteroles & Chocolate Sauce Recipe

ingredients

  • 65g/2½oz Odlums Strong White Flour
  • 50g/2oz Butter or Margarine
  • 150ml/¼ pint Cold Water
  • 2 Eggs (Lightly beaten)
  • Filling:
  • Whipped Cream
  • Chocolate Sauce:
  • 250g Carton of Cream
  • 150g Shamrock Dark Chocolate

methods

  • Preheat oven to 200°C/400°F/Gas 6. Lightly grease a flat baking tray.
  • Place water and butter/margarine into a saucepan over a low heat until butter/margarine melts. Bring to a brisk boil.
  • Reduce heat and add sieved flour. Stir briskly with a wooden spoon until mixture forms a soft dough and leaves sides of saucepan. Remove from heat and allow to cool
  • Add the eggs gradually and beat until mixture is smooth and shiny.
  • Drop dough in tablespoons about 3” apart into the greased baking tray. Alternatively put dough into an icing bag and pipe the dough out onto a baking tray. Bake for 25 minutes at the preheated oven temperature until puffed and golden.
  • Remove from oven and slit along one side. Allow to cool.
  • When cold, fill with whipped cream and serve with hot chocolate sauce.
  • Warm cream over a low heat. Add the chocolate and stir until chocolate has melted. Do not allow to boil. Serve warm over Profiteroles.

My friend Niamh recommended trying Oatly Milk Barista Edition in porridge so I gave it a go. Apparently the Barista Edition is much nicer than the others so I will take her word for it. White Chocolate and Raspberry Traybake🍰

I was looking forward to trying this recipe as raspberries and white chocolate are a great combination. This traybake goes well with some freshly whipped cream and a nice cup of tea☺️

ingredients

  • 200g Butter softened
  • 200g Caster sugar
  • 200g Self-Raising Flour
  • 4 eggs
  • 50g Ground Almonds
  • 1 portion icing sugar for dusting
  • 150g Raspberries
  • 1tsp Vanilla extract
  • 100g White chocolate

method

  • Preheat the oven to 180° C/gas mark 4. Grease a 28cm x 18cm rectangular tray with butter and line with non-stick baking paper.
  • Cream the butter and sugar in a mixing bowl until well combined and pale in colour, then mix in the eggs and vanilla extract. It will look a bit scrambled, but the flour will sort that out.
  • Sift the flour and salt into the bowl and mix to combine, then stir in the ground almonds.
  • Chop the white chocolate into chunks.
  • Mix in the fruit and chocolate chunks, then pour the batter into the tray.
  • Bake for 45 minutes, until golden and a skewer comes out clean.
  • Cool in the tin.
  • Dust with icing sugar, then cut into squares.

Milano🇮🇹

Last year my family and I went to Italy for the first time. In the good ole days we used to go to Spain a lot, so Italy was somewhere new and exciting. We flew into Milan Bergamo airport and stayed in a lovely hotel called Hotel Mediolanum for three nights. It was an enjoyable trip and we plan on visiting Rome on our next holiday.

Places of interest we visited were Duomo dil Milano, Teatro alla Scala, Sforza Castle, Corso Buenos Aires, Porta Venezia, Piazza della Repubblica, Piazza Gae Aulenti. One of the days we visited Lake Como, Bellagio and Varenna. It was well worth the hour journey by train to see such spectacular scenes. It was January, so a quite time of year to visit for tourists. It would be great to go again in the summertime. Decathalon was one of my favourite shops in this city. This is a big sports shop with good quality clothes for a low price that is popular in many European countries. I also loved the Swatch shop. Foodwise, a large quantity and variety of pizza and pastas were consumed throughout the four days. This city has wonderful architecture, galleries and theatres. 🍕🍝

Butterscotch Sauce Review🍯📝

Testing new and local food products is something I could get very used to. I am not a picky eater and like to try new ingredients, products and dishes. I am an amateur food critic, so I will keep this blogpost relatively short.

Product Name: Big Red Kitchen Butterscotch Sauce
Store purchased: McCambridges, Galway
Price: €3-5
Weight: 130g
Ingredients: Cream, sugar, golden syrup, butter
Allergens: 🍬No Artificial Additives 🌾Suitable for Vegetarians 🍞Gluten free

I enjoyed this Butterscotch Sauce with mini pancakes for brunch. This sauce would be tasty served with ice-cream, on waffles, cheesecakes or banoffee pie.

The jar has a pretty fabric wrapped around the lid and would look cute on your kitchen counter. This butterscotch sauce has a rich, thick texture. It should be stored away from sunlight and in the fridge once it has been opened. The colour of this butterscotch sauce is a caramel-ly brown colour. It is a soft and sweet sauce and should be served in small amounts. The Big Red Kitchen is a company based in Co. Meath and also produces other goods such including a selection of jams, marmalades, curds and chutneys.

Would I buy again?

Mini pancakes Recipe🥞

This is a Tesco recipe and doesn’t take long to cook. Go wild with your favourite toppings 🍓🍐🍌🍯 I made this for brunch today. These pancakes make the perfect breakfast or after-dinner treat.

  • 150g self-raising flour
  • 1 egg
  • 250ml semi-skilled milk
  • oil for greasing
  • toppings of your choice (I chose Big Red Kitchen Butterscotch Sauce)

Put the flour into a mixing bowl. Make a well in the centre and add the egg and about half of the milk.

Using a whisk, or wooden spoon, mix to a smooth, thick batter. You may need to add a little more milk if the batter is too thick to mix.

When the batter is smooth, gradually stir in the rest of the milk until it is well combined.

Add a small amount of oil to the frying pan; just enough to give a non-stick layer to the surface of the pan. Heat on high until the oil begins to smoke, then turn down the heat to medium.

Pour 15ml spoons of batter into the pan. This should make pancakes about 3cm in diameter.

Leave each pancake for about 30 seconds. Bubbles will appear on the surface and the mixture will start to set. Flip each pancake over using a palette knife or fish slice and leave for another 30 seconds.

I had 6 mini pancakes this morning for brunch with Butterscotch Sauce as the topping.
