Vegan Tacos Recipe🌮

Disclaimer: not a vegan. This recipe by The Happy Pear serves 1. Ingredients can be varied according to your preferences, (vegan) cheese may also be used. Black beans may be used instead of red kidney beans.

ingredients

  • For the ‘Meat’
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1/2 a red chilli
  • 100g oyster or button mushrooms
  • 4 tbsp tamari
  • 1 tin red kidney beans (drained and rinsed)
  • 1 yellow pepper
  • For the Salsa
  • 1 red onion
  • A handful of cherry tomatoes
  • Juice of one lime
  • Coriander
  • A ripe avocado
  • 1/2 tsp ground cumin

To serve

Taco shells

vegan nacho cheese (optional)

method

  • Roughly chop mushrooms as well as some red and yellow peppers.
  • Add mushrooms to the pan, along with the tamrai.
  • Add your beans to the pan and mix.
  • Add peppers to the pan, mix and fry for another 2 minutes.
  • To make your salsa, chop your red onion, halve your cherry tomatoes and, after removing the skin and core, slice your avocado. Add these to a bowl along with the rest of the ingredients for your salsa, and mash with a fork.

This Oat Drink is light brown in colour and has a smooth consistency. This Oat Drink tasted good in my porridge as an alternative to regular milk or water. Once opened, this oat drink should be refrigerated and consumed within 5 days.

Pineapple & Banana Smoothie Recipe🍍🍌

I enjoyed this refreshing smoothie with my breakfast this morning while sitting outside in the sun.

4 ice cubes

¼ fresh pineapple-peeled, cored and cubed

1 large banana, cut into chunks

1 cup pineapple or apple juice (I used apple juice)

method

  • Place ice cubes, pineapple, banana and apple juice in a blender and process until smooth and thick.

Strawberry-Coconut Smoothie Recipe🍓🥥

This recipe is by Martha Stewart and is quick and easy to make. I enjoyed this smoothie this morning for breakfast with a bowl of porridge. Smoothies are a healthy drink that can be made with all kinds of fruit. I look forward to trying more smoothie recipes in the future.

  • 1 cup slightly thawed frozen strawberries
  • 1 banana
  • 2 tablespoons light coconut milk
  • 3/4 cup water

method

  • Blend all ingredients until smooth.

Product Review #3: Totally Nutz Smooth Peanut Butter

I love peanut butter. It goes with so many foods. I love it on homemade brown bread, on bagels, in porridge, with pitted dates or with sliced bananas. Peanut butter is a high-calorie spread that goes with many food products and can be used as a baking ingredient. The higher % nuts a nut butter has, the less refined sugar it has. Peanut butter is high in protein and good fats and should be eaten in moderation.

I enjoyed this smooth peanut butter spread on a bagel with sliced bananas this morning for breakfast. I normally have porridge for breakfast, so this was a nice change. I prefer smooth peanut butter to crunchy peanut butter if I am eating it on bread as it is easier to spread. This peanut butter is a light brown colour and the consistency is quite liquidy so should be stored in a cool place once opened. Oil separation may occur so the peanut butter should be stirred. This peanut butter is made in Galway and the Totally Nutz company also makes almond butter and crunchy peanut butter. I look forward to trying this in porridge and as a baking ingredient.

Sticky Toffee Pudding Recipe🍮

This recipe is by The Happy Pear and serves 4-6.

🥦Suitable for vegans

Ingredients

  • 200g pitted dates chopped
  • 200ml of boiling water
  • 75g sunflower oil
  • 2 tbsp molasses or treacle/maple syrup
  • 1 tsp vanilla extract
  • 50g coconut sugar
  • 2 tbsp ground flax seeds
  • 6 tbsp water
  • 150g white flour
  • 1 tbsp baking powder
  • 1 tsp baking powder

method

  • Preheat the oven to 180 degrees. Chop the dates into small pieces ensuring there are no hidden stones in the middle.
  • In a bowl, pour the boiling water over the dates and leave to sit.
  • Make 2 flax eggs by mixing the ground flax seeds and the water in a mug, mix well and leave to sit for 5 minutes.
  • In another bowl add the sunflower oil, vanilla extract and treacle and mix until homogeneous.
  • Mix together the flour, sugar, baking soda and baking powder in a large bowl.
  • In a food processor blend the dates and water till you reach a smooth caramel like texture.
  • Make a well in the centre of the dry ingredients and mix in the flax eggs, date mixture and sunflower and treacle mix until well combined.
  • Line a baking tray approx 34cm (13 inches) x 34cm (inches) with baking parchment and pour in the cake batter.
  • Level out and put in the oven to bake at 180 for 30 minutes.
  • Take the cake out of the oven and allow to cool. Cut into brownie shaped pieces and serve with vanilla icecream and/or toffee poured on top

Kombucha Review🍋📝

My friend Alanna is a fan of this Galway-based beverage, so when I saw All About Kombucha sitting cool in the fridge section of McCambridges shop, I couldn’t resist. All About Kombucha is available in two flavours; Organic Ginger&Lemon and Organic Raspberry. I decided to be adventurous and go for the Organic Raspberry flavour.

Ingredients: Water (filtered), Green Tea, Black Tea, White Tea, Raspberry Tisane (Apple, Hibicus, Grape, Rose Hip, Natural Flavouring, Pineapple, Raspberry (2%), Strawberry, Cornflower Blue), Cane Sugar, Kombucha Culture.
Allergens: Ingredients are certified organic🌿

First impression: Interesting..not too sweet. When I opened the lid there was a fizz, with bubbles rising to the top. Probably because it was the last couple of days in the fridge. I give the bubbles a minute to settle. There were some raspberry seeds at the base of the glass bottle. I take another sip, closing my eyes and pretending I am sitting by a pool in sunny Spain. The drink is cool and refreshing, with a sweet after-taste. Cons: There is not a strong berry taste. This drink would be perfect for a picnic or a summers day at the beach.

Three Ingredient Muffins Recipe🍌🍯

This recipe is by the Food Anatomist. These muffins are quick and easy to make and can be enjoyed as a mid-morning snack or with a bowl of ice-cream✨

ingredients

For the cupcakes:

Oats, 1 cup

Bananas, x3 large

Cinnamon, x3 tablespoons

Topping:
Cashew butter, x3 heaped tablespoons

Agarve syrup/honey, 1 tablespoon

Vanilla extract, 1 teaspoon

Method

  • Preheat the oven to 180°C. Blend the oats well.
  • Mix the oats, mashed bananas and cinnamon well and place the mixture equally into six muffin cups.
  • Bake for 15 minutes and allow to cool for 20.
  • Mix together the cashew butter, honey and vanilla extract in a saucepan. Spread the mixture evenly over each muffin with a spoon. Allow muffins to cool before adding the topping.
